With the intention of strengthening research and graduate studies at the Faculty of Nutrition and Food Sciences (FCNyA) of the Chiapas University of Sciences and Arts (UNICACH), the creation of the Monitoring and Research Unit in Health Sciences Food and Nutrition (UMICAN).
This proposal was made by the director of the FCNyA, Gilber Vela Gutiérrez and the teachers of the same academic unit, Esmeralda García Parra and Veymar Guadalupe Tacías Pascacio, to the rector of UNICACH, José Rodolfo Calvo Fonseca.
In this regard, the rector of UNICACH mentioned that the FCNyA "aims to generate strategies and knowledge of high scientific rigor that contribute to improving the diet and nutrition of Chiapas families."
For this reason, he considered that this new academic unit will position UNICACH as a global benchmark in food and nutritional security issues.
UMICAN will have 3 specific lines of work, framed in the line of generation and application of knowledge "Food and Nutritional Safety": nutrition and health, food science and gastronomic heritage.
The purpose of UMICAN is to propose and develop strategies to improve the conditions of food and nutritional security in the state of Chiapas, in collaboration with the different government bodies.
In Chiapas, the presence of unhealthy lifestyles exacerbates the challenge of chronic diseases and calls for strengthening the preventive approach.
Hence the importance of having a Monitoring and Research Unit that addresses problems related to Food and Nutrition in Chiapas, especially now that the pandemic has shown that it is necessary to improve health and nutrition conditions in the Mexican population.
